Bread Kulcha



 

Ingredients -

  • Maida - 500 gm
  • Salt - 7.50 gm
  • Improver - 2.50 gm
  • Calcium - 2.00 gm
  • Gluten - 2.50 gm
  • Ajwain - 1.50 gm
  • Water - 315 gm
  • Sugar - 20 gm
  • Fresh Yeast - 20 gm
  • Curd - 50 gm


Procedure -

  • Make DOUGH MIX by adding and mixing all dry ingredients, Maida + Salt + Improver + Calcium + Gluten + Ajwain. Keep aside.
  • Make YEAST MIX by adding, Water + Sugar + Fresh Yeast.
  • Knead together Dough Mix and Yeast Mix
  • Add curd in between.
  • Knead by hand or in a stand mixer for around 20 minutes. When dough starts leaving sides of the bowl it is done.
  • Take some oil in hands and take the dough out from bowl.
  • In the mean time, make small balls and place over baking tray.
  • Garnish with Oregano (optional) and put in rest for around 2 hours in a warm place.
  • After 2 hours, spread the balls with hands and give them shape of flat bread (Indian Roti.)
  • Again put in rest for 1 hour.
  • Start preheating oven at 180 C for about 20 minutes.
  • Bake kulchas in oven for exactly 7 minutes.
