Vegetable Cutlets With Fennel Seeds



Ingredients -

  • Potatoes - 4 (medium)
  • Green peas - 1/2 cup
  • Ginger paste - 1/2 tsp
  • Garlic paste - 1/4 tsp
  • Green chili paste - 1/2 tsp
  • Carrot - 1/2 cup (shredded)
  • Cabbage - 1/2 cup (finely chopped)
  • Salt - to taste
  • Lemon juice - 2 tsp
  • Fennel seeds - 3 tsp
  • Peanuts - 2 tsp
  • Poppy seeds (khuskhus) - 1 tsp
  • Sesame seeds (til) - 1 tsp
  • Bread - 3-4 slices
  • Cornflour - 1 cup
  • Oil - to deep fry


Procedure -

  • Grind together fennel seeds, poppy seeds, peanuts and sesame seeds and keep aside.
  • Boil potatoes and green peas and mash them.
  • Heat 1 tbsp of oil and add ginger garlic paste, green chili paste, carrot and cabbage. 
  • Cook till the vegetables are soft. 
  • Now add salt, lemon juice and grinded seeds. 
  • Cook till dry and let the mixture cool.
  • Now add the above mixture to the mashed potatoes and peas. 
  • Soak bread in little water and squeeze it out. 
  • Now add this to the potatoes and mix well. 
  • Form into heart shaped cutlets with a help of a cookie cutter. 
  • Dust each cutlet with cornflour and deep fry in oil.
  • Serve hot with tomato ketchup.
