Mix maida, baking powder and baking soda. Sieve and keep aside.
Beat the sugar and eggs until very fluffy with an electric beater. Very lightly and gently, add essence and all the other ingredients with the help of a wooden spoon in the "cut & fold" movement and pour into a greased tin.
Bake at 180C for 25-30 mins in a pre-heated oven until a toothpick inserted comes out clean.
CHOCOLATE SPONGE CAKE:
Ingredients -
Maida - 2/3rd cup
Cocoa powder - 2 tbsp or 1/3 cup
Baking powder - 1/2 tsp
Baking soda - 1/3 tsp
Castor sugar - 6 tbsp
Chocolate essence - 1/2 tsp
Eggs - 3
