Boil mutton along with ginger garlic paste, green chillies paste, water and a little salt until tender.
Then to this add chili powder, coriander powder, turmeric powder, zeera powder, garam masala powder, ajinomoto, lemon juice and salt if needed. Cook until dry and cool.
Now shred the boiled mutton into reshas with hands.
Take the mashed potatoes and add the mutton reshas, coriander leaves and mint leaves and mix well.
Heat a piece of charcoal until red hot and put into the above cutlet mixture, pour a little hot oil over it and cover tightly. Keep for 15 minutes and remove the charcoal.
