Vegetable Cutlets With Fennel Seeds
Ingredients -
- Potatoes - 4 (medium)
- Green peas - 1/2 cup
- Ginger paste - 1/2 tsp
- Garlic paste - 1/4 tsp
- Green chili paste - 1/2 tsp
- Carrot - 1/2 cup (shredded)
- Cabbage - 1/2 cup (finely chopped)
- Salt - to taste
- Lemon juice - 2 tsp
- Fennel seeds - 3 tsp
- Peanuts - 2 tsp
- Poppy seeds (khuskhus) - 1 tsp
- Sesame seeds (til) - 1 tsp
- Bread - 3-4 slices
- Cornflour - 1 cup
- Oil - to deep fry
Procedure -
- Grind together fennel seeds, poppy seeds, peanuts and sesame seeds and keep aside.
- Boil potatoes and green peas and mash them.
- Heat 1 tbsp of oil and add ginger garlic paste, green chili paste, carrot and cabbage.
- Cook till the vegetables are soft.
- Now add salt, lemon juice and grinded seeds.
- Cook till dry and let the mixture cool.
- Now add the above mixture to the mashed potatoes and peas.
- Soak bread in little water and squeeze it out.
- Now add this to the potatoes and mix well.
- Form into heart shaped cutlets with a help of a cookie cutter.
- Dust each cutlet with cornflour and deep fry in oil.
- Serve hot with tomato ketchup.
