Bread Kulcha
Ingredients -
- Maida - 500 gm
- Salt - 7.50 gm
- Improver - 2.50 gm
- Calcium - 2.00 gm
- Gluten - 2.50 gm
- Ajwain - 1.50 gm
- Water - 315 gm
- Sugar - 20 gm
- Fresh Yeast - 20 gm
- Curd - 50 gm
Procedure -
- Make DOUGH MIX by adding and mixing all dry ingredients, Maida + Salt + Improver + Calcium + Gluten + Ajwain. Keep aside.
- Make YEAST MIX by adding, Water + Sugar + Fresh Yeast.
- Knead together Dough Mix and Yeast Mix
- Add curd in between.
- Knead by hand or in a stand mixer for around 20 minutes. When dough starts leaving sides of the bowl it is done.
- Take some oil in hands and take the dough out from bowl.
- In the mean time, make small balls and place over baking tray.
- Garnish with Oregano (optional) and put in rest for around 2 hours in a warm place.
- After 2 hours, spread the balls with hands and give them shape of flat bread (Indian Roti.)
- Again put in rest for 1 hour.
- Start preheating oven at 180 C for about 20 minutes.
- Bake kulchas in oven for exactly 7 minutes.
