Qubani Ka Mitha (Apricot Sweet)
Ingredients -
- Dried apricots - 1/2 kg
- Sugar - 1/4 kg
- Water - 3 cups
- Whipped Cream - 1 cup
- Roohafza Sharbat - 1/2 cup
Procedure -
- Soak apricots in three cups of water overnight. Remove the seeds from them. Crack open the seeds. Remove kernels and blanch them.
- Set aside kernels for garnishing.
- Boil apricots using the same water in which they were soaked.
- Add sugar after ten minutes and continue to boil till sugar dissolves and it becomes thick in consistency.
- Remove from heat and cool slightly.
- Keeping aside some boiled apricots,and puree the rest.
- Simmer the puree with the reserved whole apricots.Keep aside to cool.
- Then add the roohafza sharbat and mix well.
- Now keep in the refrigerator to cool.
- Serve garnished with whipped cream and the apricot kernels.
