Aaloo Corn Papad Parantha


Ingredients -


For Parathas:

  • Wheat flour - 2 cups
  • Salt - to taste
  • Ghee - 2 tsp
  • Water - 1 glass



For Stuffing:

  • Potatoes - 4 
  • Sweet corn kernels - 1/2 cup
  • Urad papad - 2
  • Ginger garlic paste - 1/2 tsp
  • Green chilli paste - 1/2 tsp
  • Turmeric powder - 1/4 tsp
  • Chilli powder - 1/2 tsp
  • Pepper powder - 1/4 tsp
  • Chat masala - 1 tsp
  • Salt - to taste
  • Lemon juice - 3 tsp
  • Coriander leaves - 3 tsp
  • Oil - to fry
  • Butter - 2 tsp



Procedure -



For Paratha:

  • Mix all the ingredients in wheat flour and knead into a soft dough. 
  • Keep aside for 15 minutes.



For Stuffing:

  • Boil potatoes and mash them. 
  • Also boil corn and mash coarsely. 
  • Roast the papad and crush it.
  • In mashed potatoes, add corn, ginger garlic paste, green chilli paste, turmeric powder, chili powder, salt, lemon juice, coriander leaves, chat masala, pepper powder and lastly crushed papad. 
  • Mix well and keep aside.


For Serving:

  • Take a small portion of flour and roll out into a chapati. 
  • Place a little potato mixture in the centre and gently roll into a paratha again.
  • Heat oil in a non-stick pan and shallow fry the parathas on both side.
  • Serve hot garnished with a dot of butter.
